Is there a way to sort the images in each particular gallery?

You can manually sort them through the Actions menu. Advanced users may want to use SQL to update the Sequence column in the gs_Album and gs_MediaObject tables.

Better sorting options will be included in the upcoming 3.0 version, due later this year.
