Looks like Custom Fields didn't make it into GalleryServerPro 2.4.1 or am I missing something?

No, it didn't. That is now scheduled for the 2.5 release. I will post a roadmap in the coming weeks.

I'm very interested in the ability to enter custom fields for a document. Did this make it into the 2.5 release that just came out?

No, it did not. It is now scheduled for 3.0. See the roadmap.
